Makes 2 - 4 servings

Ingredients:

  • 8 oz wide rice noodles, cooked according to package instructions

  • 1 lb boneless, skinless chicken breast or thighs, thinly sliced

  • 2 tbsp vegetable oil

  • 2 cloves garlic, minced

  • 2 cups Chinese broccoli or regular broccoli, chopped

  • 2 large eggs

  • 3 tbsp dark soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp sugar

  • 1 tbsp fish sauce

  • White pepper, to taste

Instructions:

  1. In a small bowl, mix together the dark soy sauce, oyster sauce, sugar, and fish sauce. Set aside.

  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and cook for 30 seconds until fragrant.

  3. Add the sliced chicken and cook for 4-5 minutes until cooked through.

  4. Push the chicken to one side of the skillet and crack the eggs on the other side.

  5. Scramble the eggs and cook for about 1-2 minutes until they are fully cooked and slightly set.

  6. Add the chopped broccoli to the skillet and stir-fry for 2-3 minutes until it starts to soften but still retains a slight crunch.

  7. Add the cooked rice noodles to the skillet and pour the prepared sauce mixture over the noodles.

  8. Toss everything together, ensuring that the noodles, chicken, and vegetables are all evenly coated with the sauce.

  9. Continue to cook for another 2-3 minutes, allowing the flavors to meld together and the sauce to slightly thicken.

  10. Season with white pepper to taste and give everything a final stir to combine.

  11. Remove from heat and transfer the Pad See Ew to a serving platter or individual plates.

 

Optional garnishes include lime wedges, crushed red pepper flakes, or chopped cilantro for added flavor and color. Serve immediately and enjoy this delicious Thai classic at home!
